Vintage Hotels is pleased to announce that Escabèche Restaurant located at the iconic Prince of Wales Hotel in the heart of Niagara-on-the-Lake has officially changed its name to Noble Restaurant.

Noble Restaurant offers wine country cuisine, showcasing the finest ingredients from Niagara’s Terroir and paired with spectacular wines, all in an opulent Victorian setting. The atmosphere in Noble can be described as very approachable, containing original artwork from French painter JC Roy and are joyful depictions of castles and landscapes from throughout Europe lending to an atmosphere of Nobility.

Kelly Exelby, General Manager of The Prince of Wales Hotel says “We were looking for a name for our restaurant that suits the iconic Prince of Wales Hotel, the culinary offerings our Executive Chef Chris Smythe and his team creates.  Noble also represents our commitment to a high level of service and let’s not forget our award winning wine list and wine cellar, which includes the finest offerings from Bordeaux Burgundy, California and of course Niagara.” “Our veteran Sommelier – Fred Gamula will play matchmaker between you, your dinner and the wine creating a complete culinary experience.”

If you are looking for a well curated farm to table experience, in an elegant setting, Noble Restaurant is the choice for you. A new Fall/Harvest menu will be launching on October 1st at Noble Restaurant along with the opportunity to try some “Grandiloquent” white or red wine produced by local winery Megalomaniac, made specifically for the Prince of Wales hotel and is sure to delight and impress your palette. The name “Grandiloquent” is defined as extravagant in language, style, or manner which fits perfectly in describing the luxurious Prince of Wales Hotel.


Executive Chef Chris Smythe welcomes diners to Noble Restaurant for a contemporary Canadian cuisine with a focus on only the freshest locally grown ingredients, seasonality and sustainability.
