New Executive Chefs Bring Taste of Change to Vintage Hotels

Prince of Wales and Millcroft Inn & Spa welcome dynamic new chefs

FOR IMMEDIATE RELEASE – Niagara-on-the-Lake, ON November 4, 2010 – Two of Vintage Hotels’ properties have appointed new Executive Chefs to lead their CAA/AAA four-diamond restaurants. Niagara-on-the-Lake’s historic Prince of Wales hotel welcomes Executive Chef Robin Little, while Millcroft Inn & Spa announces Jill St.Amour as Executive Chef.

Chef Robin Little returns home to Niagara from his previous post in Banff, Alberta where he was Chef de Cuisine at the Five-Diamond restaurant Eden in the Rimrock Resort Hotel. Now leading the culinary team at Prince of Wales, Chef Little brings a host of culinary experience having worked alongside talent such as Mark McEwen, Eric Ripert and Alfred Portale. His culinary career took him across the continent as he graced the kitchens of several Fairmont Hotels and Resorts (Royal York, Banff Springs, Southampton Bermuda), as well as the Ritz Carlton Grand Cayman and The Fontainebleau Miami Beach.

Little has developed his own distinct style of avant-garde cuisine drawing on trusted French techniques of the past while embracing trends of the future. He is eager to continue the tradition of creating enticing, innovative menus for guests of the award-winning Noble Restaurant. Chef Robin Little continues to push the boundaries of culinary art and science at the Prince of Wales with his novel philosophy of creating a dynamic sensory dining experience for every guest.

Chef Jill St.Amour has been appointed as Executive Chef at Millcroft Inn & Spa, Vintage Hotels’ award-winning country retreat in Caledon, Ontario. She was chosen for this role based on her excellent culinary performance at Prince of Wales where she was the Executive Sous Chef since 2008.

The youngest daughter of a butcher and a mother who fed a family of eight with the grace of the most seasoned chefs, Jill was inspired to pursue a career in culinary arts. She graduated Niagara College’s Culinary Management program before heading overseas to earn her European qualifications as a chef. Ms. St.Amour worked in a variety of establishments such as the Delta Sherwood in Muskoka and Niagara winery restaurants before joining Vintage Hotels.

St.Amour’s passion for fresh, local, organic food simply prepared to showcase its natural flavour will lead the Millcroft into the next generation of cuisine. Jill Chef St.Amour believes that “Every meal should be like a woman in a black dress with a strand of pearls; simple and uncomplicated, yet elegant.
